Chocolate Cherry Protein Bars

Serves:

Ingredients:

  • 2 cups almond meal or whole almonds.
  • 1/2 cup goji berries.
  • 1/4 cup dried cranberries.
  • 1/4 cup cacao nibs.
  • 1 tbsp chia seeds.
  • 2 tbsp protein powder (I use tropeaka vegan)
  • 3 tbsp raw cacao.
  • 1 tsp stevia.
  • 1/4 cup nut milk (may need to add a little more).
  • 2 tbsp nut butter – I used almond butter.
  • 1 tsp cinnamon.

Method:

  1. Add all ingredients into a food processor and blend until well combined.
  2. May need to add a little more liquid depending on how dry the mixture is.
  3. Line a baking tray and poor the mixture out, flattening with hands, making it around 2 -3 cm thick.
  4. Put in freezer for 1 hour and store in fridge.

Note: These are all rough measurements so may need to play around a little.
