Winter Spiced Porridge

Ingredients:

  • 1⁄2 cup organic rolled oats
  • 1 cups 1.5 unsweetened plant milk
  • 1 tablespoon raw honey
  • 2 teaspoons ground cinnamon
  • 1 teaspoon nutmeg
  • Pinch sea salt

Poached Apple (optional)

  • 1 apple, peeled
  • 1 tablespoon monk fruit
  • 1 teaspoon cinnamon

Method:

  1. If making the poached apple, place 1 cup water, monk fruit,and cinnamon in a small saucepan. Stir to dissolve and bring to a gentle simmer over medium heat. Add the peeled apple and reduce heat to low. Poach for 12–15 minutes, turning halfway, until tender when pierced with a fork. Remove from the liquid and set aside.
  2. In another saucepan, combine rolled oats, plant milk, raw honey, cinnamon, nutmeg and a pinch of sea salt. Stir well and bring to a gentle simmer over medium-low heat.
  3. Cook, stirring frequently, for 5–7 minutes, or until the oats are creamy and cooked to your liking.
  4. Pour the porridge into a serving bowl. Top with the poached apple (if using) or your favourite seasonal fruit. Drizzle with extra honey if desired and finish with a sprinkle of cinnamon or nutmeg.
