Banana Berry Chocolate Muffins
Serves:
Makes 12 muffins
Ingredients:
- 1 cup almond meal
- ¾ cup of buckwheat flour
- ¼ cup of coconut flour
- 2 Tbsp of desiccated coconut
- 2 tsp baking powder
- 4 Tbsp of coconut sugar
- 2 tsp stevia powder
- 1 ½ cups of milk of choice
- 1 egg
- 3 Tbsp raw cacao
- 1 cup frozen raspberries
- 1 banana chopped
- 1 block of dark lint chocolate
Method:
- Pre heat oven 180°C and Grease muffin tray
- Combine all dry ingredients into a mixing bowl
- Add 1 egg to dry ingredient bowl then slowly milk, may need to add more milk depending on the consistency as this needs to be like a cake batter
- Add chopped banana, raspberries and chopped lint chocolate
- Using spoon divide the batter evenly into muffin tray and bake for 25 to 30 mins or until golden brown and skewer comes out clean
