Banana Berry Chocolate Muffins

Serves:

Makes 12 muffins

Ingredients:

  • 1 cup almond meal
  • ¾ cup of buckwheat flour
  • ¼ cup of coconut flour
  • 2 Tbsp of desiccated coconut
  • 2 tsp baking powder
  • 4 Tbsp of coconut sugar
  • 2 tsp stevia powder
  • 1 ½ cups of milk of choice
  • 1 egg
  • 3 Tbsp raw cacao
  • 1 cup frozen raspberries
  • 1 banana chopped
  • 1 block of dark lint chocolate

Method:

  1. Pre heat oven 180°C and Grease muffin tray
  2. Combine all dry ingredients into a mixing bowl
  3. Add 1 egg to dry ingredient bowl then slowly milk, may need to add more milk depending on the consistency as this needs to be like a cake batter
  4. Add chopped banana, raspberries and chopped lint chocolate
  5. Using spoon divide the batter evenly into muffin tray and bake for 25 to 30 mins or until golden brown and skewer comes out clean
