Cauliflower Pizzas With Roasted Pumpkin and Dukkah

Ingredients:
Base:
- 465 grams (3 cups) of cauliflower rice
- 1 clove of garlic
- 3 Tbsp parmesan cheese or nutritional yeast (vegan option)
- 1 egg + 1 egg white
- 3 Tbsp almond meal
- ½ tsp mixed spices
- ½ tsp ground cumin
- ½ tsp ground sage
Toppings:
- 2 cups roasted pumpkin
- 1/2 a red onion
- 1 roasted capsicum
- 1 cup of basil

Method:
- Preheat oven to 180°C
- Cut pumpkin into cubes and roughly chop onion and place both on a baking tray with olive oil, salt + pepper and bake for 25 mins
- Blend cauliflower in food processor until rice like consistency, then place in a mixing bowl
- Whisk 1 egg and 1 egg white in a small bowl and add to cauliflower rice
- Add parmesan, spices, almond meal and garlic to the cauliflower rice and mix well
- Spread about 3 tbsp of cauliflower rice mixture onto a baking tray and press mixture into small round pizzas using your fingers and bake for 30 mins or until bases are golden brown and firm
- Top each pizza with about 3 tbsp of pumpkin (using a fork mash this onto each pizza) add onion and roasted capsicum then put pizzas back in the oven for 10 mins
- Finally garnish each pizza with dukkah, fresh basil, and Good Fat Mayo
