Cauliflower Pizzas With Roasted Pumpkin and Dukkah

Ingredients:

Base:

  • 465 grams (3 cups) of cauliflower rice
  • 1 clove of garlic
  • 3 Tbsp parmesan cheese or nutritional yeast (vegan option)
  • 1 egg + 1 egg white
  • 3 Tbsp almond meal
  • ½ tsp mixed spices
  • ½ tsp ground cumin
  • ½ tsp ground sage

Toppings:

  • 2 cups roasted pumpkin
  • 1/2 a red onion
  • 1 roasted capsicum
  • 1 cup of basil

Method:

  1. Preheat oven to 180°C
  2. Cut pumpkin into cubes and roughly chop onion and place both on a baking tray with olive oil, salt + pepper and bake for 25 mins
  3. Blend cauliflower in food processor until rice like consistency, then place in a mixing bowl
  4. Whisk 1 egg and 1 egg white in a small bowl and add to cauliflower rice
  5. Add parmesan, spices, almond meal and garlic to the cauliflower rice and mix well
  6. Spread about 3 tbsp of cauliflower rice mixture onto a baking tray and press mixture into small round pizzas using your fingers and bake for 30 mins or until bases are golden brown and firm
  7. Top each pizza with about 3 tbsp of pumpkin (using a fork mash this onto each pizza) add onion and roasted capsicum then put pizzas back in the oven for 10 mins
  8. Finally garnish each pizza with dukkah, fresh basil, and Good Fat Mayo
