Choc Chip Peanut Butter Cookie Bombs
Serves:
12 cookies
Ingredients:
- 1½ Cups Almond Flour (or you can use half almond flour and half coconut flour)
- 2 Eggs
- 1 tsp baking powder
- ¼ cup cacao nibs
- ½ block of LovingEarth 85% Dark Chocolate )see product recommendations)
- ¼ cup coconut flakes
- 2 tsp pure vanilla extract (no added sugar)
- 4 tbsp coconut sugar or raw honey or maple syrup
- 2 tbsp natural peanut butter
- 1 tbsp cacao powder
- 1 tbsp coconut oil (can use butter or olive oil)
- Roughly ¼ cup nut milk (I used almond milk)– may need to add more or less depending on consistency
Method:
- Preheat oven to 180 degrees celcius
- Cut up the LovingEarth Chocolate finely until similar consistency of cacao nibs
- Combined all ingredients in bowl (should be a dough texture)
- Roll into balls and push down with a fork or your fingers
- Cook for 10-15 minutes or until golden brown
Note: These are all rough measurements so may need to play around a little.
