Choc Chip Peanut Butter Cookie Bombs

Serves:

12 cookies

Ingredients:

  • 1½ Cups Almond Flour (or you can use half almond flour and half coconut flour)
  • 2 Eggs
  • 1 tsp baking powder
  • ¼ cup cacao nibs
  • ½ block of LovingEarth 85% Dark Chocolate )see product recommendations)
  • ¼ cup coconut flakes
  • 2 tsp pure vanilla extract (no added sugar)
  • 4 tbsp coconut sugar or raw honey or maple syrup
  • 2 tbsp natural peanut butter
  • 1 tbsp cacao powder
  • 1 tbsp coconut oil (can use butter or olive oil)
  • Roughly ¼ cup nut milk (I used almond milk)– may need to add more or less depending on consistency

Method:

  1. Preheat oven to 180 degrees celcius
  2. Cut up the LovingEarth Chocolate finely until similar consistency of cacao nibs
  3. Combined all ingredients in bowl (should be a dough texture)
  4. Roll into balls and push down with a fork or your fingers
  5. Cook for 10-15 minutes or until golden brown

Note: These are all rough measurements so may need to play around a little.
