Healthy Caramel Slice

Ingredients:
Base
- 2 cup Blanched almond meal
- 1 Egg
- 3 tbsp Monk fruit or sweetener of choice (can use maple syrup)
- 3 tbsp coconut oil (melted)
Caramel Filling
- 250 grams cashew butter (or nut butter of choice (macadamia, peanut, almond))
- 1⁄4 cup maple syrup (can use 1/3 cup if want sweeter)
- 2 tsp Vanilla extract
- 1 pinch Flaky sea salt
Chocolate top
- 1 cup Dark choc chips
- 2 tbsp coconut oil
Method:
- In a large mixing bowl, combine the almond meal, one beaten egg, your sweetener of choice, and coconut oil. Mix well until fully combined.
- Line a square baking tin with baking paper. Press the mixture evenly into the base using the back of a spoon or your fingers to flatten it out. Bake in the oven at 110°C for 10 minutes.
- While the base is cooking, in the same mixing bowl add the cashew butter, maple syrup and vanilla extract and mix well.
- Place the dark chocolate in a heatproof bowl over a pot of gently simmering water. Add the coconut oil and stir until fully melted, then remove from the heat.
- Once the base is cooked, remove it from the oven and allow to cool for 10 minutes. Pour the cashew caramel mixture over the base and spread evenly. Top with the melted chocolate, sprinkle with sea salt, and place in the fridge for 20 minutes or until the chocolate has set.
