Homemade Almond Milk

Ingredients:
- 2 cups cooked pumpkin mashed
- 1 spring onion chopped finely
2 cups almond meal (or 1 cup almond meal, 1 cup buckwheat flour) - 2 eggs
- 1 tsp baking powder
- 1/4 cup nutritional yeast or parmesan
cheese - 1 tsp ground sage
- 1 tsp ground paprika
- 1 tbsp tapioca flour
- ½ cup of milk of choice
- 1 tbsp olive oil
Method:
- Cut pumpkin into small cubes along with spring onion and bake at 180 for 20 minuets or until cooked
- In a bowl add almond meal, baking powder, sage, paprika, tapioca flour and mix well
- Add mashed pumpkin, spring onion, milk, eggs and olive oil to the dry ingredients and mix well.
- Place all ingredients into a bread tray and bake on 160 for around 45 minutes or until cooked and golden brown.
