Nutella Cookies

Serves:

makes 12 cookies

Ingredients:

  • 1 cup of ground hazelnut
  • 1 1/2 cups of almond meal
  • 2 tbsp cacao
  • 1/2 tsp cinnamon
  • 1/4 cup shredded coconut
  • 1 1/2 tbsp Stevia powder
  • 1 1/2 tbsp coconut sugar (or sweetener of choice i.e. honey)
  • 1 1/2 tsp baking powder
  • 1 egg
  • 1/4 cup nut milk (may need to add more or less)

Method:

  1. Preheat oven to 180 degrees and line a large baking tray with baking paper.
  2. Add all dry ingredients into a mixing bowls
  3.  Then add egg, mix well, then slowly add nut milk, until the mixture becomes a cookie dough consistency (should be able to roll into small balls)
  4. Use a dessert spoon to roughly divide up the mixture into about 12 small balls and press down with a fork
  5. Bake for around 20 minutes at 160 degrees, or until cooked
