Pumpkin, lentil and tuna patties

Ingredients:
- 1 x 400g tin cooked lentils
- 2 cups of roasted pumpkin
- 2 x 185g tins of tuna or salmon
- 1/4 cup fresh pasley
- 1/4 cup fresh basil
- 2 egg
- 3 Tbsp almond meal
- 1/4 cup nutritional yeast or parmesan cheese
- 1 tsp paprika
- 1 clove garlic
- 1 onion
Method:
- Preheat oven to 180 degrees celsius
- Cut pumpkin into small cubes and bake or alternatively you can grate the pumpkin and put it into the pattie mixture
- In a large mixing bowl add tuna pumpkin and lentils and mash together with a folk
- Add eggs, nutritional yeast, herbs and spices, almond meal and diced onion into the mixture and mix well
- Spoon large desert spoon fulls on to a baking tray and bake for 45 minutes on 160 degrees celsius or until cooked
