Turkish Eggs

Ingredients:
- 3 Eggs
- 100 grams Plain greek yogurt
- 2 Small garlic cloves, minced
- 1 tbsp Fresh dill, finely chopped
- 2 tsp Extra virgin olive oil
- 1 tsp Harissa paste
- 1⁄2 tsp Chilli flakes
- 6 Sun-dried tomatoes
- Salt & pepper, to taste
- Fresh dill, to garnish
- Crusty bread, to serve (optional)
Method:
- Bring a small saucepan of water to a boil. Add eggs and set the timer for 7 minutes. Remove eggs and add to a small bowl of cold water to chill.
- Place olive oil, harissa and chilli flakes into a small pouring dish. Stir well to make a chilli oil dressing.
- In a small bowl combine Greek yoghurt, garlic and freshly chopped dill. Mix well.
- Begin to plate starting with your yoghurt base. Add soft boiled eggs and sun-dried tomatoes. Pour over the chilli oil dressing and garnish with more fresh dill. Season with salt and pepper & serve with your choice of crusty bread (optional).
